Ammon Cakes

Ingredients

1 lb. light brown sugar

3 eggs (save one yolk for top)

3/4 cup shortening

1 tsp soda

1 tsp vanilla

1/4 tsp salt

1 lb flour (approx 3 1/5 cups)

Directions

Beat eggs light. Add sugar slowly. Add shortening, vanilla, soda. Mix salt into flour. Mix into wet. Refrigerate overnight or until chilled. Roll out and cut out. Rub yellow of egg in center. [a sort of smudge like a fingerprint]. Sprinkle with cinnamon [very lightly]. Bake on greased sheet for 8-10 minutes at 375.

Notes

"There is a story in the Bible about Ammon or Amnon and being "led astray" by some cakes. I find no other reference and I've sent a note to Mrs. Bond's daughter to see if she has any idea about the name.

I think the texture depends on using shortening rather than butter.
